Título : Place branding. La gastronomía como valor de marca y factor de atracción turística : el caso de España

Resumen : Esta Tesis Doctoral titulada Place Branding. La gastronomía como valor de marca y factor de atracción turística: el caso de España. se divide en tres grandes bloques. Un primer bloque compuesto por los capítulos I, II, III y IV donde se aborda el marco teórico así como la metodología empleada en este trabajo de investigación. Un segundo bloque formado por el capítulo V donde se muestran los resultados estadísticos obtenidos y finalmente un tercer bloque compuesto por el capítulo VI en el cual se exponen las conclusiones alcanzadas. El capítulo I se centra en la revisión de la literatura sobre place branding, desde sus orígenes hasta la actualidad. Esta revisión nos ayuda a conocer los orígenes, el nacimiento, la evolución, y el desarrollo del place branding. Para ello, se ha estructurado el capítulo siguiendo un orden cronológico comenzando con las primeras investigaciones relacionadas con este tema, aparecidas en los años 80, hasta las realizadas en la actualidad. El capítulo II analiza el fenómeno del turismo como disciplina de estudio en lo referido a la evolución del concepto y las diferentes definiciones recogidas por la literatura. Se interpretan aquí de los datos del sector a nivel internacional y, de una manera más específica, el caso de España, especialmente en todo lo referido a su incidencia y peso sobre la economía nacional. En una segunda parte se examinan los diferentes aspectos relacionados con el destination branding. En el capítulo III se analiza el impacto de la globalización en la gastronomía y la comida local. Se realiza en primer lugar una aproximación a la gastronomía desde un punto de vista conceptual además de un análisis de la evolución histórica de esta disciplina en España. En los siguientes dos puntos se estudian los datos económicos de los sectores afines a la gastronomía (hostelería, restauración e industria alimentaria) en España. En la tercera parte del capítulo se comentan las investigaciones académicas relacionadas con el turismo y la gastronomía referidas a las diferentes definiciones existentes sobre turismo gastronómico, perfil y motivaciones de los denominados turistas gastronómicos y finalmente las investigaciones que se han centrado en el branding gastronómico y cómo se está desarrollando este concepto en España. El capítulo IV se divide en tres epígrafes. En el primer epígrafe se presenta el problema a investigar así como el método elegido para llevar a cabo la investigación. En el segundo, se comentan los objetivos perseguidos por este trabajo de investigación así como la formulación y justificación de los elementos estudiados. Por último en el tercer epígrafe se detalla la descripción de la muestra y el trabajo de campo realizado. El capítulo V expone los resultados estadísticos obtenidos del experimento empírico llevado a cabo y se divide en 3 epígrafes. En el primero se realiza un análisis univariable mediante descriptivo a nivel sociodemográfico así como del resto de las variables estudiadas. En el segundo epígrafe se realiza un análisis bivaraible mediante correlaciones y anovas. Finalmente en este bloque se analiza un análisis multivariante a través de un análisis factorial exploratorio (AFE) así como un análisis de regresiones. El capítulo VI plasma las conclusiones que se han derivado de este trabajo de investigación y se divide en tres epígrafes. En una primera parte se describen las conclusiones de este trabajo de investigación, divididas a su vez en: conclusiones derivadas de la revisión de la literatura, en conclusiones emanadas de los resultados estadísticos y finalmente las conclusiones fundamentales. El segundo epígrafe se centra en las limitaciones que el estudio ha tenido. Por último se proponen las líneas de investigación futuras.
This doctoral thesis entitled Place Branding. Gastronomy as brand value and tourist attraction factor: the case of Spain is divided into three sections. Chapters I, II, III and IV summarize the theoretical framework and the methodology used in this research. In Chapter V the statistical results obtained are shown and finally a third part where Chapter VI shows the conclusions reached. Chapter I focuses on the review of the literature on place branding from its origins until today. This review helps us to know the origins, evolution, and development of place branding. The chapter is structured in chronological order starting with the first research related to this topic appeared to those made today. Chapter II analyzes the phenomenon of tourism as a field of study with regard to the evolution of the concept and the different definitions given by the literature. Here are interpreted sector data internationally and, more specifically, the case of Spain. The second part examines the different aspects of the destination branding. In Chapter III the impact of globalization on gastronomy and local food is analyzed. Firstly an approach to gastronomy from a conceptual point plus an analysis of the historical evolution of this discipline in Spain are interpreted. In the following two points, economic data related to gastronomy sectors (hotel, catering and food industry) in Spain are studied. In the third part, academic research related to tourism and gastronomy related to the different existing definitions of gastronomic tourism, profile and motivations of so-called gastronomic tourists and finally the investigations have focused on the gastronomic branding and how this concept is being developed in Spain. Chapter IV is divided into three sections. In the first section we present the problem and investigate the method chosen to carry out the investigation. In the second, the objectives of this research and the formulation and justification of the elements studied are discussed. Finally in the third section the description of the sample and the fieldwork conducted are detailed. Chapter V presents the statistical results obtained from the empirical experiment carried out and is divided into 3 sections. In the first univariate analysis is performed using descriptive socio-demographic as well as the rest of the variables. In the second section proposes a bivaraible analysis is performed using correlations and anovas. Finally in this block a multivariate analysis through an exploratory factor analysis (AFE) and a regression analysis is analyzed. Chapter VI shows conclusions derived from this research and is divided into three sections. Conclusions drawn from the review of the literature, emanating conclusions of statistical results and finally the key findings: In the first part the findings of this research, divided in turn described. The second section focuses on the limitations of the study has had. Finally the future research lines are proposed.
