La cadena de valor del cerdo ibérico en España: organización sectorial y gestión de la calidad

Abstract

Este capítulo trata sobre la estructura que presentan las cadenas de jamón curado ibérico en España, en el caso particular de una denominación de origen protegida. El cerdo ibérico es un animal orginario de la península ibérica, que por caraacterísitcas y por la alimentación basada en los recursos de la dehesas, hace que se consigan unos embutidos y productos curados muy apreciados en España y en otros mercados, siendo el jamón ibérico el producto más valorado de cuántos productos puedan obtenerse del cerdo en España.

The present chapter is a description of the main characteristics of the value chain that can be found in the production of Iberian dry-cured ham, in particular when it is included in a Protected Designation of Origin. Iberian pig is an indigenuos breed of the Iberian peninsula that has special characteristics because of its feeding regimen based on the natural resources of the "dehesas". This sytem of production makes the obtained products highly appreciated and of great quality. This chapter will give an overview of the structure of the value chain, the type of relations between the actors, the structure of the quality management system, focusing on the standard and its mechanisms of control, and the communication from farm to fork.
