dc.description.abstractEste trabajo presenta el diseño e implementación de una maqueta funcional de un sistema de trazabilidad para la cadena de suministro del aceite de oliva, basada en la integración de comunicaciones IoT mediante el protocolo MQTT y tecnología blockchain Ethereum. El sistema aborda una problemática estructural del sector: los registros del proceso productivo son, en muchos casos, manuales, centralizados y susceptibles de error o manipulación, lo que dificulta la verificación independiente de la autenticidad del producto por parte de compradores, distribuidores y organismos certificadores. La arquitectura propuesta se organiza en cuatro capas: presentación, aplicación, persistencia e infraestructura IoT. El núcleo del sistema está formado por un backend desarrollado con Spring Boot, encargado de coordinar la lógica de trazabilidad, la persistencia local en una base de datos H2 y el registro de eventos en un smart contract desplegado sobre una red Ethereum local. La comunicación IoT se integra mediante MQTT, permitiendo incorporar al flujo del sistema datos asociados a las distintas etapas del proceso productivo. La interfaz web actúa como herramienta de apoyo para guiar al operario a través de las fases de campo, transporte y almazara, así como para consultar el historial de trazabilidad de cada lote. El prototipo permite certificar hasta trece eventos a lo largo del proceso cubierto, desde la creación del lote en el campo hasta la extracción final del aceite en la almazara. Cada evento registrado en blockchain queda asociado a un hash de transacción único, verificable de forma independiente sin depender del sistema como intermediario de confianza. Los resultados obtenidos demuestran la viabilidad técnica de integrar comunicaciones IoT y blockchain en un sistema de trazabilidad agroalimentaria. La solución propuesta refuerza la integridad de los datos y mejora la transparencia y auditabilidad del proceso frente a los modelos de trazabilidad centralizados convencionales.es-ES
dc.description.abstractThis work presents the design and implementation of a functional prototype of a traceability system for the olive oil supply chain, based on the integration of IoT communications using the MQTT protocol and Ethereum blockchain technology. The system addresses a structural problem in the sector: production process records are, in many cases, manual, centralised, and susceptible to error or manipulation, which makes it difficult for buyers, distributors, and certification bodies to independently verify product authenticity. The proposed architecture is organised into four layers: presentation, application, persistence, and IoT infrastructure. The core of the system consists of a Spring Boot backend responsible for coordinating the traceability logic, local persistence in an H2 database, and event registration in a smart contract deployed on a local Ethereum network. IoT communication is integrated through MQTT, allowing data associated with the different stages of the production process to be incorporated into the system workflow. The web interface acts as a support tool to guide the operator through the field, transport, and mill phases, as well as to query the traceability history of each lot. The prototype certifies up to thirteen events throughout the process covered, from lot creation in the field to the final extraction of oil at the mill. Each event registered on the blockchain is associated with a unique transaction hash, which can be independently verified without relying on the system as a trusted intermediary. The results obtained demonstrate the technical feasibility of integrating IoT communications and blockchain in an agri-food traceability system. The proposed solution strengthens data integrity and improves the transparency and auditability of the process compared with conventional centralised traceability models.en-GB
