Los millennials y las dietas restrictivas. Implicaciones para las empresas del sector alimenticio
Abstract
El objetivo del presente trabajo es analizar los motivos que llevan a los millennials españoles a adoptar dietas restrictivas de consumo de carne. Para ello, se ha hecho una revisión de literatura para los dos primeros capítulos, centrados en los millennials en cuanto a consumidores de alimentos y en los tipos de dietas restrictivas de consumo de carne existentes y los motivos que impulsan a adoptarlas. A continuación, se ha realizado un trabajo de campo, utilizándose la encuesta online dirigida a millennials con dietas desde la omnívora hasta la vegana, en la que se han tratado diferentes variables para medir esta predisposición: motivaciones, factores demográficos y de personalidad.
Tras el análisis de los resultados, se concluye que la tradición constituye una importante barrera para adoptar estas dietas, pues la mayoría de los individuos pertenecen a poblaciones en las que el consumo de productos animales es central en su cultura. Ello se potencia por el miedo al rechazo social si decidiesen seguir estas dietas. Los motivos económicos también son predictores negativos para cambiarse, dado el elevado precio de los alimentos sustitutivos de la carne. Se ha demostrado que la preocupación por el bienestar animal y el medioambiente son los dos motivos principales para reducir o eliminar totalmente el consumo de carne y otros productos animales, de modo que cuanto mayor sea la preocupación por ambos, mayor será la predisposición para comenzar una dieta restrictiva. Esto se potencia cuanto mayor es el sentido de responsabilidad.
La finalidad última de este artículo es servir de orientación a las empresas que trabajan en el sector alimentario que quieran expandirse en éste para así poder atraer potenciales consumidores cuyas necesidades no están satisfechas plenamente, atender su demanda y, consecuentemente, ganar en competitividad. The aim of this paper is to analyze the motives that lead Spanish millennials to adopt restrictive meat consumption diets. To this end, a literature review was carried out for the first two chapters, focusing on millennials as food consumers and on the types of existing meat-restrictive diets and the reasons for adopting them. This was followed by fieldwork, using the online survey aimed at millennials with diets ranging from omnivorous to vegan, in which different variables were addressed to measure this predisposition: motivations, demographic and personality factors.
After analyzing the results, it is concluded that tradition is a major barrier to adopting these diets, as most individuals belong to populations in which the consumption of animal products is central to their culture. This is reinforced by the fear of social rejection should they decide to follow these diets. Economic motives are also negative predictors for switching, given the high price of meat substitute foods. It has been shown that concern for animal welfare and the environment are the two main reasons for reducing or eliminating the consumption of meat and other animal products altogether, so that the greater the concern for both, the greater the predisposition to start a restrictive diet. This is enhanced the greater the sense of responsibility.
The ultimate purpose of this article is to serve as a guide for companies working in the food sector that want to expand in this sector in order to attract potential consumers whose needs are not fully satisfied, meet their demand and, consequently, gain in competitiveness.
